Here's my foolproof method to whip up juicy, chicken breast during the week with @lilydalechicken



1 – Choose quality and start with great chicken like @lilydalefreerange for the best results.

2 – Cut your chicken breasts lengthwise to ensure even cooking.

3 – Create a simple, but flavourful marinade with olive oil, lemon myrtle, garlic, and salt. Let it marinate in the fridge for 1-4 hours.

4 – Grill over high heat to achieve a beautiful sear on the outside without drying out the centre.

5 – Pair with a fresh, vibrant salad (like a Fattoush salad) and enjoy!

Lemon Myrtle and Garlic Grilled Chicken

Ingredients
– 4 @lilydalefreerange chicken breasts
– 3 tbsp olive oil
– 1.5 tsp lemon myrtle
– 3 cloves garlic, finely grated
– 1 tsp salt

Method
1. Slice the chicken breasts in half lengthways so you end up with large flat fillets. Place the sliced chicken breasts in a bowl with the olive oil, lemon myrtle, grated garlic, and salt. Mix well, cover, and leave in the fridge to marinate for 1-4 hours.
2. Preheat your grill to the highest setting and remove the chicken from the fridge.
3. Grill the chicken on both sides, turning every 45-60 seconds, until the chicken is cooked through. This will take roughly 5-6 minutes depending on how hot your grill is.
4. Once you have good colour on both sides and the chicken is cooked through, remove from the grill and place on a wire rack to rest for 3-4 minutes before serving.

  2. For those less experienced, here's how to do it in a pan;
    First, prep your chicken as Andy has shown you, it's a great way. Heat pan to medium-high heat, lubricate your pan and place your chicken in. Look at the side of the kitchen you'll see a white 'border' start to go up as it cooks. Once that white border is about at the middle, flip and let the two white borders meet in the center. Cover with a lid, drop the heat a bit and let it cook for 2 minutes. The water that's left inside will steam it to perfection.
    Of course, you could (and should) always check the temperature, but this is a quick, easy and fool-proof way to make a decent chicken breast with minimal fuss.

  3. A lot of food influencers or chefs on YouTube rarely post their recipes in the description now. Well, they say it in the video but often without the measurements. As a beginner who is just learning how to cook, it's frustrating, lol. So, I just want to say thank you for always putting the tips, tricks, and the recipe in your description for every video!   4. Free range is pretty much a scam. They get a TINY section of outdoors (literally like 1 or two chickens can sit there at a time) and are packed tightly into crowded room. It is hardly better for the chickens and is way more expensive. Don't bother. If you care about chicken quality of life, get pasture-raised.
