A classic summer meal gets elevated with creative flavor hacks for your grilled BBQ chicken!
Copycat Aldi Chickpea Edamame Salad
Ingredients:
15 oz chickpeas, drained
2 cups shelled edamame
1 large carrot shredded
¼ cup dried cranberries or raisins
½ red bell pepper chopped
½ green bell pepper chopped
¼ teaspoon salt
¼ cup olive oil
¼ cup apple cider vinegar
¼ teaspoon garlic powder
¼ teaspoon Italian seasoning
Black pepper and cumin to taste
Directions:
In a large bowl, toss together: chickpeas, edamame, shredded carrot, cranberries, bell peppers, salt, oil, vinegar and herbs.
Serve immediately or store in refrigerator for later.

I love chickpeas, going to try that recipe! I make a healthy cowboy caviar recipe with chickpeas, black beans, corn, tomato ,bell pepper, red onion etc. with a similar dressing of olive oil, apple cider vinegar, lime juice, honey and a little chili powder and cumin… yummy in the summer time.
