    Base Layer
    • A handful of walnuts
    • 2 tbsp oats
    • 1 tbsp honey
    • Cheesecake Layer
    • 200 g low-fat paneer
    • 1 tbsp honey
    • ½ tsp vanilla essence
    • 1–2 tsp coffee concentrate (adjust to taste)
    Cream Layer
    • ½ cup high-protein Greek yogurt+ honey
    • 1–2 tsp coffee concentrate
    • 1 tsp cocoa powder
    Topping
    • Unsweetened cocoa powder (for dusting)

    Method
    1. Make the Base
    • Dry roast walnuts and oats in a pan (no ghee/oil) for 2–3 minutes until slightly golden and aromatic.
    • Allow to cool, then grind into a coarse mixture.
    • Mix in 1 tbsp honey to bind.
    • Press this mixture firmly into the bottom of a jar or serving glass with the back of a spoon.
    2. Cheesecake Layer
    • In a blender, add low-fat paneer, honey, vanilla essence, and coffee concentrate.
    • Blend until smooth and creamy.
    • Spread this mixture evenly on top of the walnut-oat base.
    3. Cream Layer
    • In a bowl, whisk together Greek yogurt, coffee concentrate, and cocoa powder until smooth.
    • Add this mixture as the third layer.
    4. Finishing Touch
    • Dust the top with unsweetened cocoa powder.
    • Chill in the refrigerator for at least 30 minutes before serving for best texture.
