1 Tbsp (20ml) – Sun Dried Tomato Oil
800g (1.7lb) – Chicken Breast, Boneless & Skinless, Diced 
1 Tbsp (6g) – Dried Italian Herbs
2 Cups (400g) – High Protein Cottage Cheese 
2/3 Cup (180ml) – Chicken Stock 
1 tsp (4g) – Onion Powder 
1 tsp (4g) – Garlic Powder 
1 tsp (4g) – Smoked Paprika 
1/2 Cup (50g) – Parmigiano Reggiano, Grated 
1/2 Cup (100g) – Sun-Dried Tomatoes
200g (7oz) – Baby Spinach, Washed

  3. Can’t wait to try! I love the idea of using cottage cheese. I always need more vege’s and less pasta so may sauté onions, garlic and mushrooms, deglaze with some wine, add some red peppers and instead of Parmesan, use some nutritional yeast. Although, I may ruin your wonderful recipe.

    BTW, whenever I cook chicken breast, there is always a ton of water that seeps out from the chicken. Any recommendations?

  5. Nice one, I'm not a big fan of cream sauces, they're a bit rich for my taste so the cheese option sounds like a good one. Love having high-protein options in the freezer for a quick recovery meal when I've been on a long bike ride.
