Can’t wait to try! I love the idea of using cottage cheese. I always need more vege’s and less pasta so may sauté onions, garlic and mushrooms, deglaze with some wine, add some red peppers and instead of Parmesan, use some nutritional yeast. Although, I may ruin your wonderful recipe.
