Bread Recipe
Ingredients
3 tablespoons yeast
1 tablespoon sugar
1 cup warm water
10 cups flour
½ cup sugar
1 tablespoon salt
½ cup olive oil
3 cups warm water
MIXING AND KNEADING STAGE
In a small bowl, mix yeast with sugar, then add 1 cup warm water. Stir until dissolved. Let rise until doubled (about 10 minutes). Sometimes I forget it and it crawls out onto my counter.
In a large mixing bowl, 10 cups flour, ½ cup sugar, and salt.
In the center of the flour, pour the yeast mixture and add oil and 3 cups warm water. Mix together with a long-handled wooden spoon. It will look pretty shaggy. Use your hands to get the dough off the sides of the bowl. Let the dough rest for 15 minutes. I find that this is a perfect time to wash my hands and tidy up my kitchen.
Knead dough until the texture is consistent and smooth throughout. This only takes a few minutes.
Let the dough rise in a warm area with a light cotton cloth over the bowl. When it has doubled in size (approximately 1 hour), punch the dough down. At this point, you can either let it rise again for another hour or make it into loaves. A second rising makes for lighter loaves.
BAKING STAGE
Punch dough down. Cut dough into 4 equal sections. Shape each dough section into a loaf. Place in four greased 9×5-inch loaf pans. Cover with a cloth, and let rise about 45 minutes, or until dough is doubled and about an inch above the top of the tin.
Bake at 375°F for 25 minutes, or until golden brown.

How you did this video was so comforting to me. I just got home from a ten day trip to Scotland with my husband, my sister & her husband. I’ve missed watching your videos and am catching up today.

Deidre Koehler to Bonnie: I sent a long note and have no clue if I erased it or it posted but I will make it shorter. My mom taught all 3 daughters her bread receipt from her great-great Grandmother. The bread is fantastic yet, change through the years. Who knows why? I am going to make your mom’s recipe as it is more familiar to the original recipe. My father in Salem, Oregon was just given 5-10 day to live by his Hospice nurses, I believe he can live longer. I spent the last week with him. My husband and I went from Southern Orange County, CA to Salem, Oregon to be with him and say what I needed to that him for, once again and pray with him. I could feel a piece of my soul being left behind with the best man I have ever known. Without his guidance I would have not picked my wonderful husband and father to our children of 38 years and, our daughter found the same in her husband of 8 years and an excellent father to their 3 year Lennie, a beautiful little girl and 7 month little baby boy, Bennett. Our 30 year old son was just married to an intelligent, religious and gorgeous young woman Cindy that is the perfect fit in our family and we adore her family as well. I just find I see all the joy. Yet the slow loss of my father, numbs the joy. I don’t want it too. The tear come out of nowhere. I appreciate your honesty. I need that joy! Thank you Bonnie
I’ve had your family’s cookbook for years, and this is the recipe I use whenever I make bread. I make quite a few of the recipes in the cookbook very often. And whenever I make something from it, especially in the last couple of years, I always say a prayer for your family.
Just as a side note, if you weigh the dough before putting them into the pan you will have 4 loafs that are the same size ❤

My mom made bread all the time.
Then I learned to make rolls.
Learned about proofing yeast.
My mom never proofed her yeast . Someone told me why she did that . Making sure yeast was good. Then you don’t have to throw away all ingredients if yeast is dad and does not foam up.

How fitting to see this now, a 2 loaves of this is rising as I type this and I didn’t know why I felt like I needed to make it. I have been watching you since I was 12 years old, now I just turned 22 and am a newlywed. I even sent you a grad card and remember freaking out when it was featured in an old vlog haha! The first thing I made in my house was a loaf of bread and batch of cinnamon rolls with your mom’s recipe cause it just felt fitting. I’m really struggling at this moment and needed the comfort of some homemade bread that I’ve been making since I was a little teenager with this recipe. I even did a YW lesson teaching girls how to make this, it really is good for the soul. I have been a pretty silent follower, but thank you for being there all these years without even knowing it. You’ve brought comfort to me in some of my darkest days and I love seeing you be so authentic.

Oh also! Did you happen to use food nanny Kamut? it looks like it so I wondered if you used less flour than the recipe called for? I know with kamut its 3/4 kamut to 1 cup AP flour.

This was so sweet to watch and brought up some emotions for me as well! I lost my grandmother on my dad side in 2018, she was a mother figure to me growing up so it was really hard for me since I was young and going through college. After much heartache, I got my dog who turned my life around. I met my husband at the end of 2020 and we got married in the summer of 2022. My grandfather on my mom’s side then passed at the end of 2023, a month later I found out I was pregnant. Our baby girl was born in September of 2024 and as I write this she’s snuggled up on my chest sleeping. All that to say, GOD IS GOOD! He is so faithful even through the heartache and hard times. I was in a very low place after losing 2 people so close to me but God brought so much life out of those losses. And for that I’m forever grateful ❤

Completely get you. I also grew up watching grandmother's and my mother making bread. My mom dedicated her adult life to feed her church congregation during bereavement dinners or wedding dinners. I could tell how purposefully she would kneed the loaves with all her good thought and love for whom she was making them for. She took such pride into this. Watching you and following your mom pages just like our family. Those loaves of bread are made for a purpose and such love❤️ ❤❤❤ some might find it strange but before the end into your introduction ending I too felt emotional by my own memories.
