What if you make a paste out of roasted garlic?
I prefer the Frank Proto version where he also has jarred minced garlic, which he promptly throws in the trash.

Should you remove the germ or not? Does the germ affect the flavor?
I heard how you slice your garlic affects the pungency. If the garlic is sliced vertically (tip to the clove root), it will be sweeter than cutting horizontal lines
