I believe that only a very, very small percentage of people actually have a gluten intolerance, but advertising and propaganda have convinced too many that they have that problem.

Strangely, they never mention gluten is PROTEIN!
Just a suggestion. Sounds like you have high quality equipment. Putting a microphone between a person and the camera isn’t usually what you want to do.
Let the people’s faces be visible. This may mean you need a different type of microphone.
Audio for use in visual mediums still needs to favor the VISUAL part of the medium.
