Done it with cast iron, carbon steel and over ripping hot lump charcoal.
All are good but I prefer the lump charcoal. Just better flavor IMO.

Steak temperatures:
80 degrees-black and blue 🤩
95 degrees-rare 😋
115 degrees-medium rare🤔
130 degrees -medium😡
145 degrees -medium well 👹
160 degrees -😂nuclear disaster-well done 🤮
