I am trying to get a nice crispy skin on this Bone in Pork Shank Roast. Simulating the BBQ I set the oven at 290 degrees and cooked this 9lb roast low and slow, BBQ sauce or gravy are a great sauce for this dish.
Rinse and pat dry
Apply thin amount cooking oil
coat with salt and wait 20 min
In the meantime combine herbs
1/2 teaspoon Jamacin Jerk Knox Spice Co.
1 Tablespoon Garlic Granules
2 Tablespoon Cracked Pepper Knox Spice Co.
2 Tablespoon chopped dried onion
Coat pan with cooking oil
Sprinkle over pan
After 20 min pat dry and roll the roast around in pan to coat with herb mix
Place in preheated oven at 290 degrees for 4 to 6 hours
Let cool for 20 minutes and serve.

That crispy brown skin is JUST how Uncle Floyd looked when he crashed the cropduster into our old pinion pine tree last June. He was sauced pretty good too I'll tell you.
hi how many hrs should u roast it in the oven to keep the skin crunchy like the wai it looks. You mentioned 3 hrs and the end when slicing it you mentioned 6 hrs pls let me knoq Im going to try this tomorrow for party cook in the oven. Thanks
Pork skin will remain cracking when hot,.I would advised to change temperature while roasting to have a better end result

I dunno my best guess is that America has evolved into a commercialized society where anything that might look bad for you is removed? So you would have to go to a small butcher shop to get it the way an individual likes it? We don't have those kind of butcher shops within 30 miles of my home though…
Excellent looking roast! This is the first video I didn't see the skin / fat layer scored. I guess that's for pork loins. But I DO love bone in shoulder with the marble of fat throughout. It's so juicy! Thanks for the video!
