How to Cook Pork Chops in a Stainless Steel Pan – Juicy, Tender & Delicious



This recipe will teach you how to make perfect pan seared pork chops in a stainless steel pan. They’re golden, juicy, and tender.

Ingredients
2 Bone-In Pork Chops (about 1½ inches thick)
1 Tbsp Neutral Oil
2½ Tbsp Butter (divided)
3 Garlic Cloves
¼ Cup Vegetable or Chicken Stock
1 Tbsp Dijon Mustard
2 Tbsp Honey
½ tsp Black Pepper
Salt, to taste

Steps
1. Pat the pork chops dry with paper towels to remove excess moisture. Make a few small incisions along the edge of each chop to prevent curling during the cooking process.

2. Season generously with salt on all sides, rubbing it in. Let the pork sit out for 20–30 minutes to absorb the seasoning and come closer to room temperature.

3. Before cooking, pat the top side of each chop dry again. Heat 1 Tbsp of neutral oil in a stainless-steel or cast-iron pan over medium heat for a few minutes until hot.

4. Lay the pork chops in the pan, pressing them down for full contact. Cover with a splatter screen and sear for about 4 minutes. When ready to flip, they’ll release easily from the pan.

5. Flip and cook for another 3–4 minutes on the second side until golden brown. Transfer to a plate and let rest.

6. Lower the heat to low and melt 1½ Tbsp of butter in the same pan. Add the crushed garlic cloves and tilt the pan so the garlic fries gently in the butter.

7. Return the pork chops to the pan and baste with the garlic butter for about 1½ minutes per side. Remove and rest again for a few minutes.

8. Turn the pan back to medium heat and deglaze with ¼ Cup of stock, scraping up the brown bits. Stir in the resting juices, Dijon mustard, black pepper, and honey. Simmer until thickened and glossy.

9. Slice the pork off the bone, plate with roasted vegetables or sides, and spoon over the honey mustard sauce.
