The absolute best Maple Bacon recipe!
Cure for 5 days
1 cup maple syrup
1 cup brown sugar
1 tsp pink curing salt
1/2 cup salt kosher
9 tbs black pepper
2 tbs chilli flakes
Vac seal and shelf in fridge for 5 days rotating once a day
Drain from bag
Quick rinse of excess salt
Turn on grill to 175
Throw on and bring up to an internal of 150
Take off and let cool
In fridge and repeat.
Set in fridge uncovered for two days to dry
Cut and enjoy!
