It's way nicer cooked in animal fats than crappy oil and much healthier biologically that way.
Little bit of flour on the skin helps to hold the salmon skin fat and crispen even more

That a whole lot of oil, I get a better result using a cast iron with just a drizzle of oil I sear the skin in the cook top and finished in the oven for few minutes, no mess no wasted oil.
