@Chuds BBQ Are those metal pans called hotel pans? I want to order some pans like that in different sizes but I don't know the actual name for them. The one in this video seems to be extra deep from anything that I have seen online.
You are so right about doing events like this. I'm with a VFW, and we have what we call our "Brat Wagon". Mostly it's only comes out for the 4th of July, we take it into town and we setup and we cook and sell brats there. Only difference is that we buy our brats from a vender int he area, usually a couple hundred pounds. We have plenty of volunteers willing an able to spend some time at the BBQ and cook a few brats.

It was great to meet the crew and to try the food. The sausage was excellent as was the focaccia. I was very impressed with the speed of service. As you mentioned others were overwhelmed while y'all were able to relax. I learned a lot from this video and from seeing y'all work efficiently.
