Why not just demonstrate how to do it, rather than low-res still images?
This video is terrible. Why didn't you demonstrate this, instead of describing it and showing photos?
My problem with cutting leaks is that I don't want to damage my knife with all of the grit in the leaks. Is there a way around that, or is the grit not going to damage the blade?

Normally i soak my vegetables after cutting to get rid of the hidden dry mud and sand. You will notice the dirt in the water after rinse.
