I was wanting to make sure about the cooking time on each side.
I don't know why lots of charcoal and BBQ guys use a crazy amount of mystery spice and chemicals on their food. It often ruins the taste of good meat. I much prefer to make my own and lots of times it is just some Kosher salt, pepper and a bit of garlic powder. I would have used far less charcoal for 2 chops and cooked indirect. Just my opinion.
Great video. I have been using a smoke, one type or another, for 30 years. I haven't used charcoal since then. I bought a 14" weber grill and will be using for steaks and probably pork chops since I saw your video. Thanks for all the great videos you put out. Keep smoking!
My favorite way of cooking chops is definitely on charcoal and wood. I don't like pork chops any other way.
