Love this idea. Most of my whole chickens come from Costco, so they give me a nice tray to deconstruct my chicken. The tray's size makes it a bit difficult to use a chef's knife so i use a parring knife and carve it out wearimg gloves cause its a hot bird.
With her taking it out of the oven and cutting right away it may have actually not finished that last little bit.
However, go buy a stores rotisserie (do even your own) using a thermometer… i guarantee it will look similar.
However, for my preference I leave it in a longer and check the thermometer and then let it rest then cut.
Why not do it in the bathtub? So the kitchen stays spotless. Genius advice
Great tips for sure. Here, let me add one: Always let the chicken rest a few minutes before carving as this let's the juices settle.

Rule 1: Don't under cook your chicken with the dark meat red juices running all over your cutting board.
