  1. Meh, didn't care for this soup. The kale is still leathery after the short cooking time. "Blooming" (frying) the first tablespoon of pesto gave it a burnt flavor. The dried gnocchi is tender but flavorless. If you are going to make this soup, I offer the following suggestions:

    Stir all of the pesto into the broth, don't fry the first tablespoon and use the best premade pesto you can find. I recommend the Costco brand.
    Unless you really like kale, use a package of baby kale
    Substitute a cannelini or other white bean for the gnocchi

  2. Looks great and I’m going to make it. I have not been a fan of bitter greens in the past, but I am learning that not only are they really good for us, they can also be prepared in such a way that I actually enjoy them! Thanks for this yummy looking recipe, Ashley!

  3. I made this for dinner tonight. Delicious! At first I was thinking of subbing different things but committed to making it using the exact recipe. I think next time I’ll try it with Italian sausage and cannellini beans in place of the chicken and gnocchi and then alternate between the two. Either way, I’ll also add a squeeze of lemon.
    Thank you for such an easy, versatile, and tasty recipe.
