Now if you change out the marshmallow filling with dulce de leche you get Alfajores. Also very delicious!

Thanks for this – my grandkids love making smores in rhe summer. And they loved making homemade marshmallows…. not sure how much chocolate will make it onto the cookies…
1. I almost never roll out cookies since you published Lon Lam's tips for getting a nice symmetrical roll for slice and bake cookies. That would work here too. Could also make them a little smaller….
2. Wouldn't a piping bag be easier for the filling?
3. Might be easier to put cookies on footed rack and pour the chocolate over?

Moonpies you buy at the grocery are always horrible, just my opinion, these however look delicious. Question, did they edit out mentioning RC Cola? Why cannot they mention that?
