Kare-kare is a Filipino stew complimented with a thick savory peanut sauce. Usually, you see this dish at the Filipino birthday party or some special events such as festivals. It tastes delicious if you eat this with bagoong (shrimp paste). In this recipe, I used Beef Oxtail to level up the taste and with the use of Instant Pot, it made it easy, tender and delicious.

✿ Ingredients:
2.5 lbs Beef Oxtail –
6 cloves Garlic (mined) –
1/2 Onion (or 1 cup) (diced) –
1 bunch Long beans –
5 pcs Bok Choy –
1 pc Eggplant –
1 can (280g) Banana Blossom –
1 tbsp Beef Bouillon –
1/2 cup Peanut Butter (creamy) –
1/2 tsp Pepper –
1 tsp Salt –

[Kare Kare Sauce Mixture]
1/4 cup Rice Flour –
1 tbsp Annatto Powder –
1/2 tsp Paprika Powder –
1 tbsp Sugar –
Water
