My daughter gave me about a gallon of freshly picked succulent cherry tomatoes from her garden. I made this recipe and used Mascarpone for the first time. Will never use Philadelphia cream cheese again for this dish. Delicious! Thank you!

That’s a winner. Made tonight. Super creamy. I tried it just made, then tried about 2 hours later. Fantastic. Love it after it sets up for a while then adding the extra olive oil and pecorino.
Thank you for the beautiful recipe! I have a question though: why not boil the pasta together with the tomatos, so that the pasta absorbs the tomato juice and the starch would stay in the mix in the dish? Also, that way you only use as much pasta as the dish needs, being more economical as well. Am I wrong thinking this way?

I just made this and it's the best pasta ive I've ever had. It beats even the canned whole san marzano tomato pastas that i have made
I have made this with this with fine parmegiano, using the hot pasta water to melt the cheese like Vincenzo shows in the lemon pasta video. Don't think I have ever had mascarpone, and always forget to put basil for whatever reason. This pasta is amazing though, and I have been able to reduce the number of tomatoes and amount of cheese.
What is the difference between tossing pasta and stirring it?

Dude! This is the best sauce I’ve made since Vincenzo’s tomato basil! As good as penne vodka but far lighter and simpler. So good.
