Something completely different, yet also a dessert: the layering of this (amazing!) crêpe cake brought up associations of Spekkoek (Lapis Legit)… It's an Indonesian-Dutch layer cake and can taste amazing! I'd love to see you create a Spekkoek 🙂

I'm from Belgium and I grew up with crêpes (we call them pancakes). Never have I ever used a recipe, I know the ingredients, but the amounts are always eyeballed. We do have a dedicated pancake pan, which can only be used for pancakes. It is very flat and thin and essential, even in my very minimalistic pans and pots drawer ❤
i enjoyed that moment of hesitation with the scoop and weighing up to stick it on the counter or in the bowl
