In Mexico the melting cheese they used is a MEXICAN melting cheese! Thinly sliced cabbage is used, never lettuce. This is Tex Mex food, not real Mexican taco’s. Shame
For extra crunch I use shredded cabbage instead of lettuce 😋

Edit to add that I’ve made these several times by now. Our favorite taco recipe! I’ve used other meats too, such as left over chicken or ground beef, etc.

Two small tomatoes diced
1/2 onion diced
One jalapeno diced
Tbsp garlic
2 tbsp ketchup
Salt and pepper.
The pith is where the heat is.

Me and my mom did this recipe (though with a ground beef mixture, not shrimp) and it was really good! Prepping the tortillas made it really easy to pop everything in the oven when it was ready, and the tacos were beautifully crisp but pliable. It was also amazing how hot they stayed for so long! It was great, will do again.
