How to make EASIEST Red Pork Tamales IN an Stand Mixer & Instant pot, The BEST Step BY Step Recipe

This recipe is for 12 to 15 tamales
Instant pot cook time 35- 38 minutes (quick pressure release)

Ingredients/shopping list
10-12 Corn Husks
1.5 pounds masa (nixtamalized corn dough)
1/3 cup lard (or vegetable shortening)
1/2 cup chile sauce
1 Tbsp Chicken bouillon
3 cups Water to boil chiles
7 guajillo chiles (for spice use New Mexico ❤️)
6 garlic cloves
1/2 white onion
1 Tbsp chicken bouillon (or start with 1 tsp salt)
1.5 ponds Pork chopped into small chunks (pork butt, pork shoulder)
2.5 cups water
2 bay leaves
1 tsp salt (or 1 tsp chicken bouillon
1/2 poblano or Anaheim pepper thinly sliced
1/2 potato thinly sliced
Desired amount of olives

Masa Ingredients
1.5 pounds masa (nixtamalized corn dough)
1/3 cup lard (or vegetable shortening)
1/2 cup chile sauce
1 Tbsp Chicken bouillon
* Chili sauce will vary depending on climate and brand of masa. You’ll need 1/2 cup to 1 cup of Chile sauce, adjust accordingly.
* We are in a humid state and I used 3/4 cup total

Chile sauce ingredients
3 cups Water to boil chiles
7 guajillo chiles (for spice use New Mexico ❤️)
6 garlic cloves
1/2 white onion
1 Tbsp chicken bouillon (or start with 1 tsp salt)
* Save 1 cup Chile sauce to season masa

Instant pot pork
Instant pot Cook time 35 minutes
Stove top cook time 1 hr 15 minutes- Bring all ingredients to a boil- Skim impurities and place a lid on your pot- Cook on low until soft and tender.

1.5 ponds Pork chopped into small chunks (pork butt, pork shoulder)
2.5 cups water
2 bay leave
1 tsp salt (or 1 tsp chicken bouillon)
* Save 2 cups of broth
* 1 cup will be used to blend chiles and 1 cup to keep filling wet

  2. I love that you mentioned that men should help! My grandma had almost all boys and got sick of doing them all herself, so she made the rule "you want tamales you have to help." Everyone was on masa spreading duty, she made the meat, rolled them, and cooked them. Decades later I'm still continuing the tradition, I do her duties, and my dad, husband, and preschool sons will be helping spread the masa.

  3. Oh! I could almost smell them from here lol.
    I drove Taxi for 10 years & some of my regular clients would give me a dozen Tamales for my Christmas & New Year's present. The best presents I ever got lol.
    I love Tamales, even now & I turned 69 a little over a week ago lol! I can still eat medium heat with no problems with heartburn etc, like other older people seem to have lol. I can't eat as much as I use to but I can still eat in stages like you were talking about lol.
    Cloud, you & your sister have been a God send for me & my love of Mexican foods. I've been addicted since I was a youngster lol. I seriously love the spices & heat lol!

  4. Hey Stephanie, question? I do not have a mexican market so i will have to make the masa from scratch..i found your other video how to do that. My question is..do i make it like your other video and then add the stuff from this video? Sauce,lard etc?

Hi views on the road , I need help ! on your video on 5:15 or so, how did you make that masa that you are putting on your blender? ? it looks already wet, i noticed you already have the 1/3 cup of lard in the mixer and you have the following ingredients on masa. do we add another 1/3 of lard to make that wet masa you are putting in blender?

  6. YEA game changer!!! I made masa, vacuum sealed it for approx. for 2 doz. same with meat mix!
    OR IF your in a rush, make ahead vacuum seal dz at a time, take out thaw ( KEY important or their mushy) TOOOOO COOL! unexpected cravings? company? TAMALES!!!
