How would sub'ing quick cook oats? Good? Bad? So-so?
I don’t digest oats well, so I’m wondering if buckwheat could be substituted? Like do they also have the same protein that holds onto water since they also get “slimy/gummy” like oats…. Any thoughts?
Tried them on Thanksgiving, a bit too solid for my tastes. The 1/4 c of molasses was too much.
I just made these for Thanksgiving (going in freezer until then). They turned out really well, are so tasty & look just like theirs! Except I cut mine into 9 rolls & kneaded by hand.
plastic shower caps work great for covering bowls, etc and are reusable quite a number of times

Or…you can eat oats for breakfast and make too much, knowing that it’s time to bake bread. Then after breakfast you take the leftover oats and add yeast and flour and warm water (left in the the kettle from making coffee) and start a sponge. Off you go…
Oh my gosh I'm shocked. Why are you using volume measurements. Bread needs mass measurements even if you insist on pounds and ounces, but best is grams.

3/4 cup old fashioned rolled oats
2/3 cup boiling water
2 tbsp unsalted butter
1 1/2 cups bread flour
3/4 cups whole wheat flour
1/2 cup cold water
1/4 cup molasses (not blackstrap)
1 1/2 tsp instant or rapid rise yeast
1 tsp salt
I hope this helps the reviewers who were upset they couldn’t access the recipe without a subscription.
For those who would like weights, for flour and oats they are usually on the side of the bag, but anything you can’t find an internet search can.

I found an identical recipe in my food processor book! I am delighted because I tried it in the mixer and the rolls came out too dense. Trying that tomorrow.

Pecan Pie is popular Thanksgiving dessert. Here is one thing about making your own Pecan Pie: make sure your brown sugar is mushy and have enough moisture before it gets mixed with eggs. It usually includes syrup but you can make it without the syrup.

I printed the recipe and I have a feeling these are going to be a regular thing around here! Sometimes I just want something a little bit sweet, and I could just imagine spreading some butter and jam on those, wow! Plus I am an oatmeal addict!
How about replacing molasses with a tablespoon or so of honey to get a more neutral flavor?

So important to be accurate when making bread. Measures flour and rolled oats by cups. But needs the water to be boiling before measuring? Hard to take this recipe seriously.
