How To Make Focaccia | Jamie & Gennaro



Old pals Jamie & Gennaro show you how to make two different focaccia recipes. Gennaro opts for simple tomato and basil flavours, while Jamie adds crushed potatoes, fresh thyme and a handful of gorgonzola. Soft, fluffy bread with delicious toppings – you’ll be hard pressed not to eat these straight from the oven! Serve alone or with cured meats for a tasty and filling snack.

    7 gramas de fermento / 14gr/kg
    325 ml água morna / 750ml/kg
    Uma colher azeite

    Coloque 500gr de farinha numa tigela e derrame o líquido por cima.

    Misture com uma colher e depois misture com a mão até ficar elástica.

    Deixe crescer por 40min
    Unte a forma com polenta
    Coloque a massa na forma e coloque azeite por cima
    Coloque os toppings

    Umedeça um pano coloque por cima e dize crescer por mais 45min

    Colocar no forno gentilmente por 20-25 minutos a 200C

  2. Today I tried this recipe and the result was delicious. Firstly i wasnt sure that the yeast became active or not but after getting from oven, inside was fluffy and outside was perfect golden. I can recommend, dont add too much things because i used olive, cherry tomato, onion and walnut which are a bit much. while eating, some of things fall down 🙂

  3. Foccacia is not bread. Ask anyone who KNOWS italian cuisine.
    Since i watched Jamies chinese dishes beeing checked by actual chinese people (his stuff is the opposite of authentic), i became more critical.
    Only because there‘s a „very itialian“ man next to him, doesn’t means this is authentic.
    For examlpe the seasoning is not just olive oil, its water-olive oil-salt. (water is important)

  4. 6 years later, still mking these mazing foccacia ! Tonight's, one with violet potatoes, rosemary, pancetta and permigiano regiano ; the other with cherry tomatoes, basil and mozzarella di buffala. thank you so much for this banger ! Cheers
