Classic cold Italian Pasta Salad with a homemade Italian dressing is the perfect potluck or summer side dish. It’s easy to make and everyone always loves it!

✅Ingredients
PASTA:
• 1 pound rotini pasta
• 1 pint cherry tomatoes, halved
• 8 ounces fresh mini mozzarella cheese balls, halved
• 1/2 – 1 cup sliced olives
• 1 cup mini pepperonis
• 1/2 cup pepperonicinis, roughly chopped
• 1/2 red onion, diced
ITALIAN DRESSING:
• 1/2 cup extra-virgin olive oil
• 1/4 cup red wine vinegar
• 1 teaspoon lemon juice
• 2 teaspoons Italian seasoning
• 1 teaspoon sugar
• 1/2 teaspoon garlic powder
• Pinch of red pepper flakes

1️⃣ 00:18 – Cook pasta according to package directions. Drain and rinse with cold water until pasta is cooled.
2️⃣ 01:27 – In a large mixing bowl, make your dressing by whisking together olive oil, vinegar, lemon juice, Italian seasoning, sugar, garlic powder, and red pepper flakes.
3️⃣ 02:08 – Add cooked pasta in with the Italian dressing. Toss with tomatoes, mozzarella, olives, mini pepperonis, pepperoncinis and onion.
4️⃣ 03:02 – Cover bowl with plastic wrap and refrigerate for 1 hour before serving.

Ideally, you don't want to rinse the pasta, so that the dressing adheres to the pasta. Wait until the pasta cools. This is more of an antipasti. Because of the added meat and cheese. Texture wise, after a while the mozzarella gets gummy and nasty. Especially if it's used at a cookout. I'd suggest using a low moisture cheese, or omitting the deli meat and cheese. Using a uncooked mirepoix of onion, carrots, celery and bell peppers. Texture is key.

I HATE Italian Pasta Salad. But my wife requested it. Thanks for the instructions. I'm going to solely rely on them because this type of recipe always makes me gag, so I can't actually taste the food to see if it's seasoned well, etc. Always bad when the cook won't eat the food he prepped. 🙂

We slice up a couple string cheese sticks for perfect little cheese discs and a washed and drained can of black beans for added protein.
you don't run the water over the pasta you wash all the pasta flavor away just cool it off in the fridge
Great recipe. I did add 1 more tsp. Italian seasoning and the juice if 1 whole lemon as it was flat, but that fixed it. Thanks for the recipe, I'll be making it again.

If you want more bites of mozzarella the solution isn't to cut them into smaller pieces, it's to add even more mozzarella. 😀
