How to make JAMBALAYA



JAMBALAYA
Spice mix:
* 1 tablespoon onion powder
* 1 tablespoon garlic powder
* 2 teaspoon salt
* 1tablespoon paprika
* 1 teaspoon cayenne pepper/chili pepper
Meats
* 2 chicken breasts (season with 1 teaspoon spice mix)
* ½ pounds shrimp (season with 1 teaspoon spice mix)
* 4 medium hot dogs or sausages(I used chicken hotdogs)
Veggies
* 1 small onions
* 3 garlic cloves
* 4 tomatoes
* 1 hot chili pepper
* 1 small red bell pepper
* 110g tomato paste
* 5 spring onions

* 3 ½ cup raw rice (long grain)
* 2 cups chicken stock
* 2 cups water
* 1 teaspoon salt
* ½ teaspoon thyme
* 1 tablespoon spice mix
* 1 chicken seasoning cube

  1. Just finished reading a series of books set in Lousiana, Houma and New Orleans. They were eating jambalaya or gumbo all the time. I didn't even know what it was so I need to Google cajun cuisine🤦‍♀️

  2. While this is a valid attempt, this isn't jambalaya. The use of basmati rice is line with the dish. Long grain rice is correct. I understand the use of the sausages but you can get better sausages than that. However, the mirepoix (onions, celery, carrots/peppers) is missing. This is the base of the dish and helps build a flavour profile. Using so much tomato paste and tomatoes gives it a "tomato" based taste instead of building flavours from the vegetables. I suggest you do more research if you're going to attempt to cook dishes from a different culture.

  3. You should have your Jambalaya making privileges revoked! Blaspheme using hot dogs!! Use another meat but DON'T. USE. HOT. DOGS!!
    And the meat should be cooked with the other ingredients not cooked and set aside and added later.
