Ashley is awesome and so is this dish. The only thing I added was a small jalapeño for some heat and a little cold roux to slightly thicken the chili (2 tbls flour and 2 tbls butter)..

I think the added complexity of freshly roasted tomatillos, poblanos is worth the extra 15 minutes. Prepared salsa is very flat in comparison. How to make the dumplings is interesting. I want to try that.

Would recipes like this, or pot roasts, etc work with a stainless steel pot with a doubled-up foil lid? I want to do that kind of cooking so much, but just don't have a dutch oven (and it's not in the budget).
