A year or two ago, I started looking for stovetop chicken recipes when my oven was broken. Variations from Barefoot Contessa maybe had the sear go longer, maybe use butter with the flour, maybe red wine, maybe add frozen pearl onions with the peas. Coq au vin?
Whole chickens used to come with gizards including liver wrapped in paper inside. Also, containers of chicken livers are cheaper than pancetta.
Pancetta isn’t sold at my local grocery store but chicken liver is. Could I use the liver like in the original famous recipe?

shouldn't you cook your onions a little before adding the garlic? you might end up with bitter flavor
