Delicious pasta but when I got my stale bread into the blender most of it became fine dust instead of breadcrumbs 🙁
How this is different from carrettiera?
pappardelle is my fav to make, i followed one of your recipes for making it i only had a rolling pin and a sharp knife and i love it and still make it today. i now have the brass dies to make my own shaped pasta and other pastas too. You gave me the homemade pasta bug and i love it.

Rigatoni
Been having this on my list for months and finally did it. It doesn't sound like much, but the toasted homemade breadcrumbs really bring it up a noch and are so great. I didn't have any parsley though as it was a last-minute decision, will use next time. For the record my food processor wasn't able to make the breadcrumbs so had to do like 15 runs on the coffee grinder, lol. Definitely something to add to the rotation.
After using pecorino in more cooking at home, I can’t go back to other cheeses unless it’s one of the following: Gorgonzola, ricotta, white cheddar, feta, or cream cheese. Can do so much with those and most of them pack a punch with flavour/saltiness
My blood has been replaced by liquid pasta from watching all these delicious dishes.

Many thanks for your amazing pasta authentic dishes. I’m going to try a couple for sure. This one I will try first and greatly appreciate your tips about pasta, olive oil and pans for cooking. May I ask if you would be so kind to recommend which pans you would use on Amazon please. I want to get two good pans for my simple cooking life. One for sauté and the other for boiling. I’m a vegan but will cook with the Romano regalianno as I can’t get the pescorino you mention. I guess the occasional cheese won’t hurt me unless you can recommend a vegan substitute? I’ve never had this particular dish, but I’ve had and made other dishes with toasted bread crumbs with parsley, cheese and lemon zest… can’t remember the name of that… might give it a try with sourdough and some lemon zest at the end
Hey, fellas, I think we found where Americans got the idea for Italian breadcrumbs…
I was surprised to find this recipe on youtube. My mother made this for us whenever we wanted a quick snack. I thought she made it up because I like a pasta she made with breadcrumbs but didn't like the other ingredients. So she just toasted up 4C seasoned breadcrumbs in e.v.o.o then she would butter the pasta, add a touch of cream and load it up with breadcrumbs. I just made it for my daughter. I will try this version soon. Thanks for bringing this dish out in the open. I just made it with Gemelli! It holds onto the BC's nicely. Enjoy!
A sicilian friend of mine just made this on friday. Absolutely delicious! He made it exactly like you made it here. Great flavour of pepperoncini, garlic, parsley, anchovy, olive oil and salt and pepper…and pecorino or parmigiano reggiano. He added a bit more olive oil than you did…coating the spaghetti. Very nice.

I host a St. Joseph's Day dinner every year in my home and I make this! The breadcrumbs represent the sawdust as St. Joseph was a carpenter! It's delicious!

Okay, SO I am a fatty!!!! Meaning that my brain always wants to eat, and starts making things up in my mind. I had a thought!!! WHAT IF we make the Tune pasta you made, and add these toasted breadcrumbs on top, that way we can have protein with it, I can't wait for Sunday… I am making the invented tuna/breadcrumb dish, NOPE THATS IT, I'm doing it!!!! Don't try to talk me out of it!
Made this the other day but added some lemon zest to the breadcrumbs and a little squeeze of lemon juice with the starchy pasta water when finishing the spaghetti in the pan. I think a little bit of anchovy paste along with the garlic while toasting the breadcrumbs would be nice—next time.

My favorite is Strozzapreti or Rigatoni.
Our variation. Brown garlic in olive oil and remove garlic' Cook spaghetti and put in baking dish. Add oil, parsley and bread crumbs as well as chopped wlanuts to spaghetti and toss. Cover with foil and bake until bread crumbs get toasty.

Very Sicilian!!!! I grew up eating breadcrumbs with pasta con sarde for St. Joseph's Day but I love garlicky toasted breadcrumbs on all of my favorite pasta dishes.
