Red Pork Tamales Recipe
Makes 23-24 tamales
2 lbs pork shoulder Boston butt boneless
☞ Aromatic for broth
1/2 medium, white onion
4 garlic cloves, whole
2 bayleaf
2 tsp salt, kosher
1/2 tsp dry oregano
1/2 tsp black peppercorns, whole
10-12 cups of water
☞ For browning
2 TBSP of oil
For the guajillo sauce
8 large guajillos
2 ancho chiles
4 chiles de arbol
1/4 medium white onion, sautéed
☞ Molcajete
2 garlic cloves
1/2 tsp salt, kosher
1/2 tsp cumin, whole
2 TBSP water
☞ Additionally for sauce
2 cups broth to rehydrate chilis
1 cup of broth pour into blender to get the last bit of chili sauce
1 TBSP oil to fry the sauce
Season sauce to taste, I did 3/4 tsp
Note: remember the broth also has salt
For the masa dough
6 cups masa harina
1 tsp baking powder
1 cup packed, lard
1/2 cup packed vegetable shortening
1 1/2 tsp salt, kosher
3 2/3 cup of broth

Great video, thanks for sharing. You're so patient when teaching. I'm going to try this video next weekend. My first time trying tamales. You said it makes about 2 dozen. I'm assuming that doubling the recipe will make 4 dozen???
My Mexican momma taught me to make these at Christmas time.. very authentic recipe.
I'm 50 now and last time I made Tamales all by myself was when I was age 19 – it has been a LONG time. This looks like what I did back then so I'll follow along. ONE step at a time. Tonight, I'll just cook the pork and have that ready! THANKS

I’m gonna try and make this for thanksgiving! I’m not gonna eat store bought tamales 🙂
You take me right back to East L.A.! Mama made the masa and the sauce, papa cooked the meat (beef, pork and chicken-all red sauce). After browning and sizzling,
Mama finished cooking the meat in a pressure cooker, there was enough to feed all 8 of us, plus family and friends as holiday gifts.
Us kids all took a job, like an assembly line, wiping the masa on the husks, shredding the meat, wrapping, first in the husks, then in sheets of thin parchment type butcher's paper.
Papa always put a healthy stash in the freezer and the paper wrapping protected the tamales from freezer burn and also helped the steaming process.
Mama steamed them to delicious goodness. She always reserved some of the masa for sweet breakfast tamales, added a little sugar to the masa, cinnamon, raisins and chopped pineapple. These we put in small husks, folded them upward all around into little tamale sacks, with thin strips of husks to make husk string to tie the tops like little bags and, into the steamer.
Ooohhhhh, so good. The memories of an old man and I remember every second of the New Year tradition in our family.
I'm making these today and am so grateful to Rosanna for sharing her recipes. My pork is cooking, my chili's are soaking and my mouth is watering just thinking about having one once I'm done! I have cooked many of your recipes and have grown and dried chili's just to use for this food. Thank you so very much!

Christmas is at my house this year so I've decided we're Tomales… I'm goin gto need to do a double batch of the pork and chicken because my family eats like they ain't seen food before. I've done tacos and enchiladas in the past withheld usual sides. This will be my first attempt at Tomales though.
