How to Make Singapore’s Iconic Hainanese Beef Noodles 海南牛肉面 Chinese Noodle Recipe Odeon Scotts
Serves 4 pax
INGREDIENT LIST

Soup base

2L (2 qt) beef stock
1 bay leaf
1 piece cinnamon bark, pinky finger-length
1 star anise
1 tbsp white peppercorns
1 tbsp oyster sauce
1 tbsp light soy sauce
Gravy

1L (1 qt) of soup base
1 tbsp oyster sauce
1 tbsp premium dark soy sauce
1/2 tsp sugar
Potato starch solution, as needed for thickening (can be replaced with cornstarch solution)
Other ingredients

480g (16.9 oz) beef chuck tender, sliced thinly and soaked in water (Blanch beef in the soup base to enrich the flavour)
Store-bought beef balls (optional)
Handful of beansprouts (optional)
Cooked yellow noodles or thick vermicelli (adjust quantity as needed)
Pickled mustard greens (optional)
Chopped coriander (optional)
White pepper (optional)
Sesame oil (for each serving of dry beef noodles, add about 1 tsp sesame oil and a dash of white pepper)
