Guanciale? we call it hog jowl bacon or just jowl bacon. Good recipe. Thanks all recipes. also, its common to add some ( splash) of the spaghetti hot cooking liquid to make the eggs creamy and use the bacon grease as flavoring .

It tastes great – but you can't drink anything during or after the meal for around 1/2 an hour. The egg dominates your mouth with its thick, gluggy flavor and it's all you can taste.
Those eggs are raw!
