Galbani whole milk ricotta is my favorite ricotta cheese! It is actually sweet and delicious. I don't use mascarpone often but I will keep an eye out for the one from Italy. 🙂

I made this tart and it was absolutely delicious. It was easy to find the white baking chips but I did have to search for the mascarpone.

Why would more cream and no milk make for more lactose? My understanding was that cream is mostly dairy fat, with most of the lactose left in the skimmed milk.
