this is probably true, but if I'm cooking in the evening, I'm so hungry I do a very approximate job of measuring anyways. this is very important for baking though!

if you want an accurate measurement use an electronic scale. For water and mostly water the conversion doesn't even require calculation
It’s so much easier to use a kitchen scale. You get a precise measurement and many times you don’t have to use a separate container.

I’d argue weighing is more accurate given the insane level of discrepancy your testing turned out with different measurement vessels

This is exactly how to do it. The only exception is if you can measure mass instead. Mass, even on a cheap scale, is way more accurate than volume-measuring marks.
I recommend using a scale if you need to be that accurate
Your are not bending down enough. Your eyes should be at the line level. Yours are not.
