Legit question. Why is it you wouldn't eat the piece of meat raw, but you're okay with eating it when the outside is cooked and the inside is raw? I'm 100% convinced that you all either pretend to enjoy it because you think that's what you're supposed to say, or that you simply don't know how to cook meat properly without turning it chewy and flavourless, so the only way you can enjoy soft tender meat is if it's still raw.
A good chimichurri is far more important than good grill marks.

If you season the grill occasionally you don't need to season it everytime. It also doesn't stick if the marks are super defined, hard to explain. The only thing I've ever had to oil was salmon filets because they're so fragile.
