  1. Love the video and advice. I do brisket and pulled pork on my '04 Weber, however I use the snake method and add a pan with hot water in the center. A properly vented 'snake" will easily give 12+ hours of smoking time. Use hickory, apple, cherry or mesquite chunks, depending on what we're going for. Just bought a fancy two-probe electronic thermometer (Father's Day gift to myself) with remote receiver… will be interesting to see what temps I have been getting.

  2. The only problem with opening the lid to lose excess heat is that you're also introducing a lot more oxygen to the fire, which can cause temperature spikes when you close it back up again. The best thing you can down on a Weber if you start to see temperatures go up is to just choke down the vents for a while and wait for the temperature to drop. Then open the vents back up again to stabilize at the temperature you're aiming for.

  3. does smoking with charcoal cause carcinogens on the meat that can expedite cancer? what about smoking with wood only? any ways to reduce these health issues in the cooking process or techniques? Thanks!

  4. THANK GOD I clicked this vid. Thank you for showing how to trim a brisket shape that most of us get with that weird pointed knob on the point (since most channels show top quality briskets that are better shaped but they be pricey AF) Even your "how to trim" vids didn't really have the shape of the one in this video. THANK YOU!

  5. Great video! I haven't cooked a Brisket since before I had grandkids. Tell me how spicy the bark is with the pepper on it. I have grandkids, which equals picky eaters, don't like a lot of spice, so how spicy on a scale of 1 – 5. Thanks
