In today’s video I will be showing you one of my favorite methods for smoking a brisket on a pellet grill or pellet smoker, and that is the overnight brisket. This method is pretty straight forward, trim your brisket, season your brisket, and smoke it overnight at 225º F until it reaches around 180º F, or the bark is set. At that point you wrap it up, bump up the heat to 300º and continue cooking it until it’s tender. This overnight brisket smoke allows you to get a good night sleep, but still rewards you with an amazingly tender and juicy smoked brisket! I went with the @lonestargrillz pellet grill for this cook because not only is it one of the best pellet grills on the market, but it allows me to set high and low alarms for the cooker, and the meat. This gives me a peace of mind that this overnight brisket smoke will be nothing but successful!

Well done but I quit using aluminum foil do to it leeches into the meat. I use butcher paper now.
internal temp of 210…. isn't that the same temp that the water evaporates off at (and can't escape cuz of the wrap?)
more importantly this answered the question i had for a few weeks (since buying a pellet smoker this year)…. can i do this in my shed overnight in winter?
