INGREDIENTS
Compound butter for under smoked turkey skin
– 1 1/4 cups butter
– 2 cloves garlic, grated or minced
– 1/2 tsp salt
– 1 lemon, zest
Smoked Turkey and Seasoning
– 1 whole turkey
– 1/4 turkey poultry rub
– 2 tbsp olive oil
Smoked whole turkey baste
– 4 tbsp butter
– 1/2 tbsp garlic powder
– 1 tbsp rosemary, chopped
INSTRUCTIONS
Here’s the gist of it —
1️⃣ Mix butter rub. Add all of the compound butter mixture ingredients to a large bowl.
2️⃣ Season turkey and add butter under skin.
3️⃣ Transfer seasoned whole turkey to fridge and store at least 2 hours, to overnight. Remove turkey 30 min before smoking it.
4️⃣ Preheat Traeger smoker to 275 degrees F. Add Traeger Turkey Blend wood pellet chips, or whatever pellets you’re using to the hopper. If desired, add a pan with raised edges to catch the drippings below the grates (below where the turkey will sit). Add a small pan filled with water on top of the grates, to the side, to add moisture as the whole turkey smokes (optional).
5️⃣ Smoke whole turkey at 275 degrees F for 2 hours.
6️⃣ Make the baste. Melt all ingredients together.
7️⃣ Raise the temperature of the smoker to 350 degrees F. Brush turkey with baste. Smoke until turkey measures 165 degrees F.
8️⃣ Rest turkey for at least 20 min. Remove twine and carve and enjoy!

How long does it take to smoke a turkey?
In this example, we smoke an 11 pound whole turkey. The total smoke time on the Traeger took about 3.5-4 hours until the thermometer read 165 degrees F.

I smoked mine at 25F, took me 2 weeks to get it done. Pull it out, toss it in the trash bucket.

How do you get your grate higher?
Smoked at 25° for two hours?
For all those who can’t decipher the video, smoke at 275 for 2 hours, THEN smoke at 350 and baste until done which is when the meat thermometer reads 165 degrees Fahrenheit.

So annoying
We did this last Christmas. It was the best turkey I ever ate in my entire life.
I don't have a treager that has temp. It only has smoke low and high. How do I do a 18lbs turkey with my trager and how many hrs? Thanks in advance
