Thank you so much! My one married grandson and his wife made some chicken like this up for our family during this past Thanksgiving. As my luck would have it, after 54 years of marriage, my wife thinks I know everything about butchering up cattle and chicken as I grew up in East Tennessee where we raised both. She wanted chicken made up like our grandson did at Thanksgiving and I had never heard of “Spatchcock” chicken. BUT: you had! Thank you for saving an old man from disaster! I played the video for my wife so she knows the truth (secret to longevity in marriage)!

I loved this short video under 4 minutes. Everyone else seemed to think they needed a 20+ minute video to explain it.

Now that I can spatchcock, I’ve gained the respect of my family once more. My kids now obey my commands and my wife no longer scoffs at me every time a roast a chicken. i usually roast the backbone with the chicken to add to the pan drippings. good gravy
optional: make two slices in each thigh and drumstick, so it takes the same time to cook the breast does and you don't have to overcook the breast 🙂
