I watched this 3 times, it is next level! How long did it take to get to 70deg C cooking at 140C?
Looks very tasty indeed but the skin certainly does not look crispy at all…..looks rubbery to be honest.

Looks pretty decent to be honest I’d eat it, but when you brine a chicken it tastes so much juicier.
I’ve done it a couple of times and then on to the rotisserie it goes.

Chicken does not lose moisture on a rotisserie. The fluid doesn't get a chance to run out of the chicken becuase its constantly rotating.

As long as the juices come out clear and not pink or red, you're in the sweet spot for nice fully cooked, juicy chicken
I work on food safety every day, 70*c internal temperature for chicken = a red card!
Need to really stress that you never want OVER smoke poultry of any kind… chooks, turkey, duck, etc. It really makes the taste go funky.

Im sorry my dude but that chicken looks raw. I don't know what it is but any BBQ chicken I make, I have to run it up to an internal temp of 180 – 190F to get the meat texture we like. If i try pulling chicken off at 165F, everyone complains that the meat is rubbery and raw tasting.
My Houston Nephew asks what you are so afraid of that you have to use a DOUBLE heat deflector? One should be enough. Yup, that’s what he says…………
