Also do you know if this will work with frozen fish? That's about all I have access to around here for a reasonable price, but I find when I thaw it so much moisture comes out and then it's sort of dry and chewy if you know what I mean.
What a great video, I'm totally going to try this. Question: you said that normally you do a single coating, but with a binder. But in this video your single coating had no binder and your double coating had a binder, and you liked the flavour of the single coating but the texture of the double coating. So normally you would coat the fish in mayo/mustard/hot sauce first, then dredge them in the fish fry, and bake them? Thanks.

Yum! Mayonnaise is made of eggs oil and lemon juice. You can also use it to coat eggplant then coat with bread crumbs. Love your show! Thank you for your recipes! Blessings in abundance to you!!!
