I always let it rise in the pan to double it's height then push in the divots, oil, season, and then bake. Then you get that airy bread. I use a sour dough starter and gluten free now but used to do the same with gluten based flour. Nice to see the various recipes, gave me some things to test out

I have been making BA's recipe regularly, but I do let it go a day or two in the fridge.
These days my go-to recipes are almost exclusively sourdough based. As far as focaccias go, I generally either make King Arthur's "Sourdough Focaccia" (It is a bit more hands-on for mixing/kneading/shaping, but is very flexible due to its overnight refrigerator ferment) or The Perfect Loaf's "Focaccia Pugliese" (The potato just adds something special. Also, I don't keep durum flour on hand so I sub it out for khorasan)
so many methods, i thought the King Arthur would be like the Milk Street recipe (https://www.youtube.com/watch?v=eG5yI0-7ABE&t=671s) but it went a completely different way. guest possibilities are limitless

I thought I wanted focaccia. but maybe not. they all look too bready! not knocking your end results, but I wanted a flat bread that has GIANT holes throughout and yet soft crumb with crisp crust. does this exist?
