I used Wild Bear meat to make this burger….
This burger is the most unique one I’ve made yet, and wouldn’t have been possible without the help from my brother @406_bbq !
A special wild game burger topped with a Huckleberry bacon jam!
Bacon jam recipe:
• 1/2 lb bacon, diced
• 1/2 a sweet onion, diced
• 2 tbsp Huckleberry Bourbon
• 1/4 huckleberry jam
• 3 tbsp brown sugar
• juice from 1 lemon
• salt and pepper to taste
1. Start by cooking down the bacon over medium heat until crispy! Then remove the bacon and most of the grease and saute the onions for 5-7 mins.
2. Deglaze the pan with bourbon, then add the remaining ingredients and mix until combined, then bring to a simmer and add the cooked bacon back in.
3. Simmer on medium low for 30 mins, or until thickens and caramelized through!

Apart from cooking the meat itself, now your cutting board, the meat grinder and all surfaces it touched are contaminated and require a treatment. Cutting board – probably have to throw out.

I am getting your cookbook soon so I’m not sure if you have all of your smash burger recipes in there but you should make a cookbook with detailed instructions, color photos, and information on the specific brands you use for your cooking equipment, ingredients etc. A cookbook specifically geared to smash burgers would be something I’d definitely buy.
