If you're not using that grate over the fire, I'd just take it off so you don't have to lift it up every time you want to mess with the fire.

Put a piece of your wood on grill same end as fire box then ones on right wont cook faster
I understand the indirect cooking method but if you have a offset smoke box why not use it?
So you have an offset smoker then put charcoal in the cooking chamber🤷♂️🤷♂️🤷♂️🤷♂️🤷♂️make it make sense
How much more charcoal do you apply after the existing charcoal is burning out ? Do you set your grill up to temp?

You know you don't have cut indirectly on an offset smoker. That's why you have a fire box on the side for your charcoal and wood chunks 😒

I tried grilling ribs last weekend and it went horrible. After watching this video I come to the conclusion it went horribly for a few reasons: 1- I cooked it directly over heat and it got wayyyy burnt. 2- I moved the ribs too much and flipped them too much. I have never grilled ribs that haven’t been cooked before that was my first time. But lately been trying to learn how to grill other things other than just hot dogs and burgers. We bought some Smithfield’s St. Louis style pork ribs and I put sauce on them and rub myself. Also I bought the cheapest charcoal grill and it didn’t have a thermometer.
Saving up for a pellet grill now.
Been YouTubing lots of different foods so I can learn how to grill!

If you are worried about the ribs or any meats burning at the end closer to the heat, you can build a dam with foly and butcher paper. Please it on the end .
soak the wood blocks for more longer smoke. that's the flavor.
