This is seafood taken to the extreme. It’s curiosity, creativity, innovation, and ingenuity with a hint of madness and it all comes together in one of the most unique and interesting tasting menus in the world. Aponiente in Southern Spain is doing something that no other restaurant on earth is, they have 3 Michelin stars, are one of the best restaurants in the world, and from the marshes to the research lab to of course, the dinner, we’re exploring it all today.

  1. At the very end (20:22) you could have said "merroir" (rhymes with terroir but describes unique character derived from the origins within the sea rather than the land). That's the only note which I'd call a suggested correction rather than a potential marginal improvement, and most videos I could write at least ten times that many, so… clearly I ought to watch more of you and less of them!

  2. An incredible restaurant and experience that truly makes you see food in a whole new way! The innovation, sustainability, experimental creativity and craft behind it all is amazing, and I really commend the dedication and passion of the Chef and the team behind it all 👏 I'm fascinated by the grain and soy of the sea, plankton and all their molecular gastronomy 😯

  3. Please do a trip to Sydney to go to St Peter and see Josh Niland – I feel like he and Angel are the 2 chefs at the forefront of pushing the boundaries of seafood but with very different styles, would love to see that video, great job on this one!

  4. Just found your channel but quick tip, in videos of this form I think it would be smart to time stamp or categorize the video into sections. In this case the marsh, the lab and the restaurant. Otherwise keep up this outstanding content😀

  5. Incredibly well filmed and edited video.
Interesting food concepts, save the planet etcetera etcetera
Food…. way too experimental. There wasn't a single course that actually looked tasty and delicious…. maybe the bread looked the best course.
Bring back some classic gastronomy with Luxury ingredients. Good old school gastronomy. Do diners actually want to eat plankton and fish sperm ?

  6. This guy!!!
You've done it again Michael. I'd never have known about this through any other channel.
I love your way of reviewing restaurants, some we already know well, others you've yet to discover for us.
As much as I enjoy other reviewers like 'Alexander The Guest,' you keep it focused on the food, the science and the cultural context of it all.
    Well Done

  7. More Spain envy 😭 seafood is truly the only reason I'm alive. Not because of amazing creations like this, but because of living in a food desert and tinned fish and food allergies. This was absolutely mouthwatering and made me tear up. I haven't had truly delicious food in over several years. You keep bringing new, fresh content and I can't get enough. And thank you for including the sea vegetables! So many people skip over them and it's a shame because they're so delicious and nutritious. Soy included. 🤤 😍

    MOLECULAR GASTRONOMY!!!!
