Not Canadian but from northern New York and we call it sugar on snow. We microwave or boil the maple syrup first before pouring it. I would also use fresh fluffy snow, it just tends to be better lol

I know what the issue is and it’s actually extremely basic… It’s freaking cold there like unbelievably cold Your snow is not going to work. It needs to be a lot colder.

It is called “sugar on snow”.The syrup is boiled until it reaches hard candy stage then poured directly on the snow.
We do that here as well. We just put a spout on regular room temp syrup and make thin lines in snow we collect outside, pick it up with a fork and eat it

Water can freeze, but if your syrup doesnt have enough water in it to freeze it wont. If u are reducing water from it it will harden easier like a candy. Its not frozen. Its hardened by the low water content and hardened by the low temperature more easy
