I’m making these this year for Christmas. I made the Irish shortbread biscuits that you, Mrs Gemma Stafford, made for St. Patrick’s day. Those biscuits were devoured by my family. They absolutely loved them. It’s my plan to make them for two holidays only: St. Patrick’s day and Christmas. Plus it’s just an added bonus I have Irish ancestors on my mom’s side.

Breadcrumbs sound like a good idea to soak up the juices but…they aren't soaking anymore after they have been mixed. if they have been mixed into a meat filling well in advance can become saturated and lose their ability to absorb more moisture during baking. Wait to add them to the meat just before you fill your pastries.
