Ive done these a couple times but the meat tends to shrink up so it looks like a sausage patty on a big tortilla….not sure why

Using induction stove under butcher block to heat brine?
I like doing the opposite. Instead of a Burger Taco, a Taco Burger seasoned up burger patty with onions, cilantro, and taco sauce or taco burger sauce, I suppose, on a bun. That one, a ranch-seasoned burger, or a French onion-seasoned burger are some of our favorites.
If you are trying to get away from eating too much bread then this is a good alternative I guess.
So, instead of making a “burger” we make these and season the meat with homemade taco seasoning and dress it like a taco. We like them better than a basic taco.

That happened to my food processor a couple years ago, if you take the base off there's an interlock that all you have to do is splice the 2 wires together and you won't have to worry about that safety BS anymore
How about a smash burger breakfast taco? I made some the other day with hommade duck fat tortillas. Used chorizo for the meat, topped with cheese, sunny side up egg, salsa and bacon because…. bacon. They were amazing! Griddled the onions right into the chorizo like you would the burger.
Literally had to do the same thing with my food processor making sesame prawn toast filling.
This question may have been asked before. Where did you get the heating unit that you use?

Good stuff Brad! – I love the tortilla press for this cook – I've done them both ways but prefer smashing the patty by itself first to establish a nice crust on both sides, then throwing down the tortilla. All in all some great tacos!
My wife made these the other night (though not scratch made like this)… they were very underwhelming. Just keep a burger as a burger and a taco as a taco.

Yet to find a food processor that doesn’t break like that. I think I use a butter knife to turn mine on now 😂
What about adding taco seasoning to the meat
I think the texture isn't working for you because of the crust being on one side of the tortilla and one side of the burger, but if it's just how it's made you can't change it, otherwise get a crust on both separately.
I actually prefer using taco seasoning and toppings. But the smash burger style.
The consistency in this guys chopping is amazing, quite a satisfying sound as well, will try a smash burger this weekend.
What make is the Press cooker
I have the equivalent model of the same Cuisinart from almost 30 years ago, and it has the same achilles heel in the design where yours broke. I still use it, but have something to wedge in there to hold the mechanism in place so that it operates. I would have thought that over the years they would have improved the design… which means fewer sales and that directly equates to fewer golf club sets for the CEO. Cry me a river.

The optics on your smoker and the food processor made your food processor look like it had a large smoke stack and maybe gas-powered with a chain saw two stroke.

You’re really 2 steps away in just making bodega tacos or is that just regular tacos? Doesn’t seem worth it to me. Love all the condiments though.
I've never made them and truthfully don't plan on it. Ever. On your side with this one- Give me a regular burger or taco any day over that. I'm sure it is fairly good, but no thank you.
