I've only made this once, but have you ever tried making it with Bucatini instead of Spaghetti? It works great with this sauce!
Where's the cream?
Best way I ever saw to separate eggs is with one of those small plastic water bottles. Empty it. Squeeze it, point at the egg yolk, loosen grip. Yolk is sucked up. No muss no fuss.
